BURLINGTON — Squishing her way through muddy soil Monday, Nelida Martinez snapped off the tender flowering tops of her kale plants — a crunchy snack reminiscent of broccoli.

Pointing out the borders of her plot at small-farm incubator Viva Farms west of Burlington, Martinez described the raspberries, blackberries and strawberries that will grow there this summer.
